Challenge
Quellpark Kundelfingerhof in Schlatt near Diessenhofen in the canton of Thurgau is one of the few fish farming and processing operations in Switzerland. Here, fish are bred in natural spring water and 350 tonnes of fish are processed annually. The farm has been working with Proffix for many years. A complete new build and renovation presented the opportunity to modernise fish farming and processing operations along with their associated buildings, whilst simultaneously digitalising business administration. The goal was to design sales and processing processes digitally with the new, modern facility, taking large food industry businesses as a model.

Solution
Today, all process steps in fish processing are automated. The centrepiece consists of the newly integrated batch management and the connection of weighing stations to Proffix. This enables centralised control of fish processing and order picking. When a trout is processed into a fillet, Proffix automatically calculates which size of fish from which tanks needs to be taken to achieve the desired weight. After the trout is filleted, it is weighed again and the actual weight is recorded directly in Proffix. To complete the order, the ordered fillets are packaged drip-free in MAP trays, weighed again, a barcode is generated, the packaging is labelled, and the order line by line is entered on the delivery note. Thanks to the seamless integration of processes, the hotel and catering industry web shop, the HOGA-Shop, can now also be connected to Proffix. This allows B2B customers to place orders outside office hours and capture the desired list codes with a scanner. The list is then converted into Proffix order processing using DocCreator and the order is automatically recorded.
Results
Fully digitalised: By integrating Proffix into all important business processes, processes in fish processing and distribution are digitally controlled. State-of-the-art e-commerce: Thanks to the connection to the largest industry online shop, list codes and their conversion into order processing, the ordering process is largely automated. High availability: Online orders can be placed outside office hours and fish can be delivered fresh daily. Simple time management: Centralised time recording for around 24 employees. Thanks to this connection, all orders received by 4 a.m. can be processed fresh and delivered to restaurants by 10 a.m. Nine employees work with Proffix daily, all weighing workstations have a login, and all 24 employees record their hours in the time recording system via Datafox terminal.
